Yes, Word will see the stored value, not the displayed value. Use a
numeric switch in your Word merge doc's field(s).

Is this to do with the fact that excel uses doubles for storing the numbers
themselves and so they are stored at a greater d.p than is actually
displayed? And if two cells are multipled/divided do the d.p.s increase?
