The problem I have is that if I drag different fields onto the Pie chart, I
lose my custom colours on my chart. The chart reverts to using standard
colours.

I have tried to ceate a custom chart look and set this as my Default Chart
Type, but although it initally uses this default when I create a chart, if I
drag fields on or off the chart, the colours go back to the original defaults.
