Where you want your result, place this formula:

=Countif(E2:E7,"3")


where E2:E7 is the range of data.

particular task, based on dates input in other columns. I have
formatted the column so that anything greater than 3 is highlighted in

put a "total" cell in that will tell me how many rows have values that
are greater than 3 (or coloured red), whichever is easier.

Ie, trying to get the figure for how many instances the task has taken
