Default Pivot Tables

Try this:

Right-Click on the OrderDate heading in the Pivot Table
....Select: Group and Show Detail
....Select: Group
....Select: Quarters
....Click: [OK]

The individual dates will be grouped by quarters,

Note: if you have more than one year in the data,
you may want to also group by Year.
