Default Surface chart - number of catergories

Double click on the legend, and use the familiar controls on the Scale tab.
You could also select Value axis from the Chart toolbar dropdown, and format
that. Contour plots have a hidden Z axis (value axis), which in a Surface
chart (the 3D equivalent) you could click on and edit.
