Default Interpolate is disabled

Simplest way is to hide the rows and make sure the option to Plot visible
cells only is applied.
You may be able to use Autofilter to make hiding the rows easier.

Interpolation will only be available to line, xy-scatter, area, radar,
surface.

For column you would need to calculate the value based on the actual data
points either side.
