Not sure what you want. Calculate? Greek letter.
You can insert Greek letters with Insert | Symbol | Basic Greek if you have a later version of Excel (I think Insert|Symbol was added with XL2002)
Or you can use a Roman character and format it with the Symbol font S becomes S
