I have looked through the threads and believe what I require is the
SUMPRODUCT function.

I have a spreadsheet with column A containing dates in the format
dd/mm/yyyy and column B containing values.

What formula should I use in column C that will add up all deals
between two dates?

Eg between 01/01/2004 and 15/01/2005 ?
