Default One should be able to "jump" over undo command in Excel

I add a column (new column A).

Then I put sequence numbers in that column 1, 2, 3, ...

Then I can sort the whole range by any way I want and when I want to get back to
the original order, I can sort the range by column A.

It should be possible for example to sort lines in a certain way, add the
same info for similar lines and then unsort it back. This requires to be able
and undo certain actions and not every action one did previously.
