I would like to make a simple tally board of 10 students who complete
exercises. They get a tick if they complete it successfully and a cross if
they can't finish it. I also want a running total that can be updated as each
exercise is completed. Is there something that I can use to do this?

How about enter the names of the students in some column. Then, add a check
or a X in adjacent columns. To insert a checkmark use Insert | Symbol...
and pick an appropriate font and character.
