Default I want to use subtotals in Excel and hide all rows except total

Depending on how you are filtering your data you are probably better off
using a pivot table. It will handle both the filtering and subtotaling in one
convenient package...

To get started on that make a copy of the sheet. Remove all of the filtering
and subtotaling. Select Data- Pivot Table and then follow the wizard... If
you are unfamiliar with pivot tables just reply back and I can send you a few
links to get you going...
