You can increase the number of Undos available, but there are lots of things
that reset that Undo stack. If you save a file, then the stuff in the Undo list
isn't available. Even if the file gets saved by AutoSave (or Autorecover, I
think(???)), you'll lose that list.
Lots of macros can destroy this list, too.
Just in case you want to increase the number of Undos...
You can change the level of undo's in Excel:
