Default Date & Time on X Axis

You should have your date and time in the same cell. Your choices for
plotting are to make a Line chart, and make sure the axis is category (Chart
menu Chart Options Axes tab), so each date/time has a unique slot on the
category axis, or to make an XY chart, so date/time is a continuous variable
across the X axis.
