Default how can I eliminate the last character of a cell?

If it's exactly one character to remove:
=left(a1,len(a1)-1)

If you wanted to get rid of all the leading/trailing/multiple embedded spaces:
=trim(a1)

If you wanted to get rid of all the spaces:
=substitute(a1," ","")
