the easiest is to create a link from your desktop with this line in target

"C:\Program Files\Microsoft Office\Office10\EXCEL.EXE"
c:\yourfoldername\yourfilename.xls

and this in opens with
"C:\Program Files\Microsoft Office\Office10"
