One way
=COUNTIF(A1:A2500,"=01/11/2005")-COUNTIF(A1:A2500,"30/11/2005")
for the month of November
Or if you want to put your start and end dates in separate cells so you can
amend them, then with start date in D1 and end date in E1

=COUNTIF(A1:A2500,"="&D1)-COUNTIF(A1:A2500,""&E1)

Format the cell with the formula as General.
