Give this a shot.

In cell D1: 6:00 PM
In cell D2: 7:30 PM

In cell F1: =D2-D1

It should display "1:30 AM"
Right-click cell F1 and select "Format Cells"

Go to the number tab.
Select custom, and delete whatever is in the text box.

Place this in it:

hh"' "mm"''"

Press Okay, and that should do it.
