You can specify the app associated with each file extension; right click the
file, GeneralChange.., then select the app.
This is a global setting so all (e.g. .xls) files will be opened with that
app.
Depending what you want to achieve, it may not make sense to open a file in
an app that does not understand the Excel file format.

Is there any way of changing the, green X, excel shortcut icon to a
personal icon created by myself to make it my own and when double
clicking on it it will go straight into my, or specific excel program?
