I'd guess that it's workbook protection (tools|protection|protect workbook)
that's causing the "delete sheet" unavailability problem.

And if you can copy the sheets to a new workbook
one by one
edit|move or copy sheet

Then save each of those workbooks (with just one worksheet) as your smaller
files.

Personally, if I have formulas on one sheet that refer to other worksheets, I
wouldn't do this.
