hOW DO i INSTALL SYMBOLS ON THE DROP DOWN INSERT MENU?

Upgrade to xl2002 (or higher)

or install a version of Chip Pearson's Symbolizer addin:
http://www.cpearson.com/excel/download.htm
(look for Symbolizer and make sure you get the correct version)
