When using word and you have inserted a excel grid into the text how do you

Double click on the table, on the far right side in the middle there is a
black handle. Hover your cursor over the handle until it becomes a two-pointed arrow. Hold down your left mouse button, then drag to the right. This will increase the number of visible columns. To increase the number of rows, do the same thing on the handle on the bottom in the middle and drag down. To do both simultaneously, use the handle in the lower right corner.
