How do I hide the pictures on the ribbons so that it shows as a drop down list?

What! Are you trying to hide the new super feature of Office 2007!!!!!!!!!!
Rubbish isn't it?
You can't hide the icons on the Ribbon from within office. You can however
hide the whole Ribbon and make up your own toolbar.
If you right click on the small arrow far right of the floppy disk 'save'
icon (customise quick access toolbar) open the window and click on mimimize
the Ribbon.
Open up the same window again and click on more commands - you can the 'add'
the commands that you use to the 'quick access toolbar.
Probabaly not the ideal solution.
You could of course invest in one of many commercial programs to add the
classic toolbar back into your applications, or wait as I am doing until
Microsoft release a later version (for which you & I will again pay for with
mega bucks) that I feel sure will correct the error of their ways (and
introduce a toolbar without the cartoon appearance).

Don't bet on it, MS still believe that they are right and the doubters are
wrong. And whilst they continue to sell millions of copies, mainly to
corporates where most users only tweak the edges of the product, they can
afford to ignore us.
