I am trying to add

5:49
1:50
3:00
1:45
1:40
1:28
4:08
1:28
4:08
3:40
1:55
2:00
4:35
1:16
1:40
1:45
3:32
3:40

When I sum this column I get 19:43

I formatted the cells custom h:mm:ss

What am I doing wrong

One way:

Format/Cells/Number/Custom [h]:mm:ss

The [] will keep the display from rolling over at 24 hours. Note that if
you intend for 5:49 to indicate minutes and seconds, you'll need to
enter them as 0:5:49, as XL's parser assumes 5:49 is hours:minutes.
