If you want a stable version of the document, break the link - select the linked item and press CTRL+SHIFT+F9 I don't know Excel well enough to advise on how to handle versions, but if you want to have different versions of the spreadsheet and retain the links, I would imagine that you would have to create dated copies of the sheets and link them to the documents, so each pairing stands independently.
