Time & Date Formatting
 
I have a 'now' format in a worksheet for inserting date and time. Once I have
saved the sheet, I want to retain the original time / date, and not have it
change every time I re-open the document. Any ideas?

Try again :-)

You cannot do that with a formula. Just enter a time value with Ctrl-; then
a space then a Ctrl-Shift-:. This will 'hard-code' today's date and then the
current time.
