how can i reset excel to its default values?
 
Currently when I highlight a column or a row, the color of the highlighted
column/row doesn't change to a darker shade so that I can tell from where to
where is the selected area.

Assuming you are running the new and improved Excel 2007, you are pretty
well out of luck with darkening the selected cells.

Many are complaining about this.

But you should be able to tell the range selection due to the black
highlight border.

I just started using Excel 2007 and have no problem determining the selected
cell or cells if a contiguous range.

I do notice that CTRL + click to select non-contiguous ranges is not so easy
to see.
