How can I create one column (stacked) from a large table of data..
 

I have a very large table of data. I need to convert it to so the data is
stacked. Rather than hundreds of columns I need to reduce it to three
columns. One data, and the x and y axis on each row.

I think you're stuck with making a macro to do this one.
