How can I get my serial numbers that begin with "0" to not drop off the zero
in a cell of a spreadsheet?

Format the cell as text.

zero "0" dropping from the beginning of my serial numbers
 

Format as text before you enter the data, or
Precede the data with an apostrophe to force it to be treated as text, or
Format as 000000 if you want to show 6 digits including leading zeroes.
