Each day, I add the numbers of animals and lbs in the spreadsheet. Is it
possible to get the bottom to average even when all cells are not filled in?
When I get to the end of the month the 31st and 30th might not have data
depending on the month, so I am looking to skip those cells when no data is
entered.

Any help?

leave cell blank and continue with formula

If you use

=AVERAGE(B2:B32)

and

=AVERAGE(C2:C32)

blanks will be ignored.

If you want to ignore zeros....

(AVERAGE(IF(C2:C32<0,C2:C32,"")))

Press CTRL+SHIFT+ENTER. not just ENTER and this formula requires all the
cells to be filled. If you have no data, enter a 0 in that cell.
