I am new to spreadsheets and need to show the elapsed time between finishing
and starting working periods, in hours and minutes, when these periods often
exceed 24 hours

Hi,

If the period can exceed 24 hours then you need a date as well as a time for
start and finish so in your start time cell (Say A1) enter:-

1/1/2007 06:00

In your end time cell (Say B1) enter

2/1/2007 22:00

now simply do a subtraction = B1-A1
Note that B1 is the later time. Format the cell as [hh]:mm and your done.
