Select your range or the entire column and click

Format / Conditional Formatting...

on Excel's menu. On the dialog box that appears, set the first drop-down
field to "Cell Value Is", set the second drop-down field to "greater than"
and type 5:31 in the third field. Now click the Format button and select the
highlight color you want from the Patterns tab and OK your way back to the
spreadsheet. That is it.. any cell having a time greater than 5:31 will be
shaded in the color you selected.
