Is there a Timestamp function that does not update in Excel?
 
Is there a function or a formula that will create a timestamp in a cell
without it being updated when the spreadsheet is saved? Like a =NOW()
function that isn't updateable or can you make the =NOW() function where it
doesn't update?

From Excel Help -

Insert the current date and time in a cell
Insert a static date or time

Current date Select a cell and press CTRL+;
Current time Select a cell and press CTRL+SHIFT+;

Current date and time Select a cell and press CTRL+; then SPACE then
CTRL+SHIFT+;
