Default How to Define a named Formula at the Worksheet level?

I know how to "Insert, Name, Define" a formula at the Workgroup level - but
how can I do this at the Worksheet level only?

The infuriating thing is that I have done this before but I cannot remember
how (or where I found out how to)!
