Can anyone share with me how to click in a cell and have the calendar open,
and populate the cell with the calendar value you select?

Probably your best option will be to embed a Date & Time Picker Control into
your spreadsheet.

Bring up the Control Toolbox.
Click on the More Controls button (Hammer and Wrench)
Select Microsoft Date and Time Picker Control
Draw the control over top of the cell you want.
Right click the control and select Properties
In the linked cell property add the cell reference
