according to the help there is no defined limit, it's
driven by the available memory. Lots of sheets with not
much on them or not so many with a lot on them!

The maximum number of sheets in a workbook is limited by available memory.
The max number of sheets that can, by default, be in a newly created
workbook is 255

Max Number of Sheets
 
you are only limited by memory. There is a maximum of 256 when you create a
new workbook, but you can add more after it is created.
