Default date time formula

I am doing a date time formula that will seperate shifts, for instance a
person works from 0630 - 1500, another from 1430 - 2300. Then I have regular
employees that work form 0730 - 1600 and 1500 - 2230. I want to be able to
pull out all emp from 0630-1500 and so on. Is there an easy formula that
will do this?
