When I paste data from for instance a word file in to excel I need to
use tab in word to get the data in separate cells. Is it possible to
declare this separator as something else, for instance "," or ";"?

If you paste your text into a single column, you can select that column and do:

Data|text to columns
delimited
and choose the delimiter.
