Is there a way to stack column headings i.e. "Monthly Balance" becomes
"Monthly" over Balance"?

Try this:
Edit the cell
Place the insertion point after Monthly
Hold down the [Alt] key and press [Enter]
Release the [Alt] key
Press [Enter]

[Alt]+[Enter] puts a "carriage return" into the cell
