Do I have to make my times be numbers to get a true average?
 
I need an average time, does Excel automatically do the correct computation
(60 vs 100) if the field is formated as a time, or do I need to convert the
times to numbers?

No need to convert. Times are stored as fractions of a day (and displayed
according to the rules for time) so all calculations will work correctly.
You may have to format your result explicitly as time.
If times 24 hours are involved, format as [h]:mm to avoid tipping over at
24h
