conditional Formatting using checkboxes
 

Is it possible to set up a spreadsheet that contains checkboxes that
will strikethrough certain text if the box is checked?

Also is there an easy way if there are two columns of checkboxes that
only one in a row can be checked at a time? For instance, if you check
column 1's box then colunm 2 will be unchecked, if you check column 2
then column on's will uncheck on a per row basis.

Why not just use one checkbox. Either it's checked or it isn't.

Then you could use a linked cell and check for that to be true/false in your
format|conditional formatting rules.
