You're limited to 56 colors at any one time. However, if you choose

Good afternoon Nick Excel uses a 56 colour palette, so you cannot use more than this in any document, but you can create your own colours, you're not limited to the standard selection. Just go to Tools Options, Colors, Modify... and take it from there.
