If you ALWAYS need to go to the first of the following month,
=date(year(today()+60),month(today()+60)+1,1). If that 60-day wait winds up on the 1st and you then DON'T need to wait for the first of the following month, make it conditional: =if(day(today()+60)=1,today()+60,date(year(today() +60),month(today()+60)+1,1)).
