How do I implant a field into a cell?

I'm creating a form letter in Word and implanted within the document is an
Excel spreadsheet. I would like to add a field into one of the spreadsheet
cells that can be updated with each letter. The ultimate goal is to protect
the document preventing users from changing it's standard wording; however,
allow them to change only specific information.
