PivotTable - Unchecking and re-checking data fields
 

In my PivotTables, if I uncheck a data field then it is removed from the drop
down list. Is there any way to prevent this from happening, so it acts like
the column and row drop down lists?

No, there isn't any setting that you can change, to prevent this from
happening.
