How do I set up additional data fields f.e. average sale and minimum sale
with sales field as source in pivot tables?

Hi

Pull in the same field - in your case sales- to the data
section again. Double click on it and change to average.
Pull the same field again , double click on it and change
to min etc.

But how do I add these as rows right to the sales row (this was done in a
microsoft example), so that I can get a good overwview?

To arrange the fields horizontally, drag the Data field button onto the
cell that contains the word 'Total'.
