How do I preserve the accents when saving as XML Spreadsheet?

Excel displays these two French words "Comptabilité Générale" but when I save
it as an XML Spreadsheet I get "ComptabilitÃ© GÃ©nÃ©rale". Why? How can I
preserve the initial formatting? Thank you.
