The ribbon is a mess. I've tried to embrace the changes but they are just
not an improvement. If I could customize the ribbon maybe it wouldn't be so
bad. Also its huge and takes up too much space on the screen.
I've been using excel since 95 and have always loved it, not so much
anymore.

The Ribbon is a matter of taste (some say the Ribbon is the vegemite
of user interfaces). Microsoft has a useful interactive tool to allow
you to enter commands in 2003 style and see the 2007 equivalent:

You can minimize the ribbon to one line either permanently(click the
Customize Quick Access Toolbar button and click Minimize the Ribbon in
the drop down list) or temporarily(Ctrl+F1 toggle).

Yes, it takes a while to get used to the ribbon. If you are familiar
with keyboard shortcuts from earlier versions of Excel, they still work
(for the most part) in Excel 2007.
