How do I set my pivot table so that it does not display any sums of values
that are equal to zero?

You can use conditional formatting to set the foreground colour to
white if the cell contents are zero.

Excel 2007 Pivot Tables - do not display zero values
 
Change the number format to suppress them using, for example:

General;General;;@

as a custom format.
