Default Subtotals is different across versions

I have switched from an older version of Excel to 2007.
I used to be able to take a list of non-numeric data and use subtotals to
get a count as to how often a particular value occurred. Example, the list
contains A, B, C, A, A. I could run subtotals and it would tell me 3 As, 1
B, and 1 C. I am finding it very difficult to recreate that function. It
used to be so easy...
