I have done something and I don't know how to undo it. I was working on a
spreadsheet and was trying to input / but it just causes numbers and letters
to appear at the top of the toolbar over the icons and when I hit the number
or letter it tells me what that icon does. If I use another letter in the
cell and then the / it types it in. It does this even after I close excel
and start over. What have I done and how can I undo it?

You can start your data entry with an apostrophe: '/

Or you can toggle a setting:
(in xl2003 menus)

Tools|Options|Transition tab
remove the / from the "Microsoft Office Excel Menu Key" box.
